Stir-fry noodles
INGREDIENTS
- Stir-fry mix (red pepper, yellow pepper, mini corns, beansprouts, mangetout)
- Noodles
- Soy sauce
- Sweet chilli sauce
- Chow mein sauce
- Olive oil
First you’ll need a selection of vegetables. Here we are using one red pepper, one yellow pepper, a small pack of beansprouts, a small pack of mini-corns, and a small pack of mangetouts, but you can use whichever you like best, or whatever you have in the fridge and needs using. The only trick is to slice them thinly so they can be cooked easily in the pan. Or you can also get a stir-fry mix from the supermarket, ready to use.
If you want to make it really easy, you can get pre-cooked packs of noodles, you just add them to the frying pan and done. You can also get ‘dry’ noodles, but you’ll have to cook them to pack instructions beforehand.
For the sauces, here I’m using soy sauce and sweet chilli sauce. I don’t usually use salt because the soy sauce has enough salt, but you can use whatever you like. You can also swap sweet chilli for spicy chilli sauce, although if you’re cooking for kids it might not be the best idea! I’m also adding chow mein sauce to add some ‘exotic’ flavour, but you can choose any other sauces, or nothing at all.
Oh! Also you’ll need a bit of olive oil. Or sunflower oil, or butter, or whatever you normally use and you have at hand.
INSTRUCTIONS OVERVIEW
1. Heat a bit of olive oil in a wok frying pan.
2. When the temperature is very high, add the vegetables. Cook for 2 minutes, stirring frequently.
3. Add the sauces and cook for one minute.
4. Add the noodles and cook for a couple of minutes or until the noodles are done.
First we have to pour a bit of olive oil in a frying pan. If you have a wok that’s perfect, if not, any big frying pan will do. We heat the oil up to high heat - we need to get it very hot.
In the meantime, slice the vegetables -if needed-. I like to get all the vegetables ready in a bowl for ease of use.
One the olive oil is hot, we put the vegetables in the frying pan and we cook them for a couple of minutes, stirring occasionally. We then add the sauces and the noodles. If you are using the pre-cooked noodles like me, this is when you need a fork, or chopsticks, to separate them. I tend to use the chopsticks because that’s what I’ll use to eat the noodles later, and saves me having to wash an extra fork.
After a couple of minutes, that’s done. And yes, that’s all done! Easy-peasy, dinner is ready.
TIPS
You can also use spaghetti or other pasta, previously cooked.
Slice the vegetables in advance to save your time when cooking.
This time we created a delicious dish using just vegetables, but if you want to add anything else you can do it easily! Just slice some chicken fillets, or pork, or add some mince meat, or any fish that you like. Start the recipe with adding the meat or fish first into the pan, it will need a bit more time. Let it cook for about 5 minutes, depending on the what you have added, the amount and the size of the pieces, and then add the vegetables and continue with the recipe.
