Toasts and many things

I’ve been racking my brain trying to come up with different ideas for my toddler’s snacks, you know, trying to keep it healthy and varied, as well as quick and easy. And finally I landed on toasts. The good thing about toasts is that you can easily adapt them to any taste, adding and switching ingredients as you please. They can also be a nice breakfast, or a part of any meal, or you can make canapés if you’re hosting… basically, you can have toasts whenever you want!

FIRST OF ALL, BREAD

Here I am using homemade bread, but you can use whatever bread you have at hand. We can talk about bread recipes another day!

AVOCADO TOAST

Pour some olive oil on a slice of bread. Add paprika and then avocado slices. Serve with coriander leaves or spring onion slices.

As an option, smash the avocado together with some lime juice drops and paprika. You can also add chilli flakes for an special touch.

CREAM CHEESE TOAST

In a bowl, mix cream cheese (choose low-fat version if you want), the juice of one lime juice and chopped chives.

Spread the mixture on a slice of bread. Place some roasted red pepper on top, or smoked salmon is a nice alternative.

MUSHROOM TOAST

Chop some mushrooms into pieces.

Heat some olive oil in a frying pan at high heat. Add the mushrooms, some parsley and garlic granules cook for two-three of minutes until the mushrooms are soft. You can add spinach to have some veggies with it.

Pour some olive oil on a slice of bread and place the mushrooms on top.

Add grated cheese on top to melt for an extra touch.

For all of these, you can keep any left-overs in the fridge for a couple of days, ready to use again if needed. Enjoy!
