Toddler muffins

INGREDIENTS

- 3 eggs

- 125g natural yogurt

- 1 yogurt measure sugar

- 1 yogurt measure olive oil

- 3 yogurt measures flour

- 2 tsp dried yeast

- 3 tbsp choco powder

When I started this adventure I was thinking of keeping ‘healthy’. But this last week my toddler has been teething and well… it has been challenging. With all the pain and the tiredness and the drama she hasn’t been eating much, which is always an indicator that something is wrong as she usually has a big appetite. So I decided to bake a treat for her, something I knew she was going to enjoy and that was easy to chew with her aching gums. Just a side note, I am trying my best to teach my daughter a good, positive and healthy relationship with food. So when I talk about treats I mean something that she doesn’t usually have, just to offer on a special occasion. In fact, she did have one muffin the first day, but she only had half the following day. It always amazes me how well she understands her own body and needs.

Anyway, I had a recipe for chocolate muffins, but I adapted it to reduce the amount of sugar and chocolate to make it ‘healthier’, so it didn’t give her a massive sugar rush, and it wasn’t to bad for me either - I ate most of it! So this is what I call the ‘toddler muffins’, let’s get cooking!

INSTRUCTIONS OVERVIEW

1. Preheat the oven at 180°C.

2. Mix the eggs with the yogurt and the sugar in a bowl.

3. Stir in the rest of the ingredients and mix well so you don’t have lumps.

4. Grease a muffin tray with 12 spots.

5. Divide the mix into 12.

6. Bake for 15 minutes.

Preheat the oven and, in the meantime, mix all the ingredients together. It is important to get rid of the lumps otherwise you’ll end up with weird textures on the final muffins.

Grease a muffin tray, or you can use silicone moulds as I have done to save time washing up. Fill each muffin spot two-thirds, to allow for expanding room when baking. You can also make a cake instead of muffins, just grease a baking tray and pour in the mix. Then bake for 15 minutes, or 20 minutes if making a cake version.

These 15 minutes of baking time are a very useful time to wash up all your utensils, saving you some time for later. Remember to set the timer!

Once done, take out of the oven and let it cool before serving. Finally, just eat and enjoy!

TIPS

Add (low-fat/sugar) icing decorations for seasonal muffins.

Pile them up and decorate to present a muffin-tower, cupcake cake, or however your creativity inspires.
