Banana bread
INGREDIENTS
- 3 bananas
- 2 eggs
- 120g yogurt
- 1 tsp vanilla extract
- 1 tsp baking soda
- 190g flour
- 100g blueberries
INSTRUCTIONS OVERVIEW
1. Pre-heat the oven at 180°C.
2. Mash the bananas in a bowl.
3. Add the yogurt, eggs, vanilla extract and baking soda and mix well.
4. Add the flour and mix well.
5. Add the blueberries and carefully mix.
6. Lightly grease a bread tin and pour the mix inside.
7. Bake at 180°C for 1 hour.
8. Leave to rest 15 minutes before serving, and enjoy!
Firs to of all, pre-heat the oven at 180°C. Put the bananas in a mixing bowl and mash with a fork. It helps if the bananas are properly ripe. Then add the yogurt; you can use either natural yogurt or greek yogurt, whatever you have at hand. Ensure it is a sugar-free yogurt for toddlers. You can also use a fat-free version. Add the eggs, vanilla extract -you use cinnamon as an alternative- and baking soda, and mix well.
Add the flour and mix again. It helps doing it in order for ease of mixing. Finally add the blueberries and mix everything together, taking care not to smash the blueberries. You can use frozen blueberries if you like, no need to thaw before using.
Lightly grease a bread tine -or another small baking tray you have- using olive oil or butter, and pour the mix inside. Bake at 180°C for one hour. This is the perfect time to wash up and go play with your kids, just remember ti set the timer! Once done, leave to rest for 15 minutes before serving. And that would be all, enjoy!
TIPS
If you want to make it even more special -although maybe not for toddlers- you can serve with white chocolate or vanilla ice-cream.
