Tomato & mozzarella salad

INGREDIENTS

- Cherry tomatoes

- Mozzarella ball

- Olive oil

- Oregano

As the name clearly says, you are going to need tomatoes and mozzarella. This time I decided to go with cherry tomatoes; it’s a bit early for ‘true tomato’ season, and I find cherry tomatoes have more flavour this time of the year. For the mozzarella, I just got a mozzarella ball.

You are also going to need olive and oregano for the dressing.

INSTRUCTIONS OVERVIEW

1. Half the cherry tomatoes.

2. Drain the mozzarella ball and chop in pieces similar size to the cherry tomatoes.

3. Dress with olive oil and oregano.

To begin with, half the cherry tomatoes, or quarter them if you have small kids. Drain the mozzarella ball and slice, I tend to do pieces of similar size to the tomato bits. Place everything in a bowl, or in a fancy serving dish, or however you decide to present it.

And now we dress with olive oil and oregano. You can also add salt and pepper; I don’t usually use salt and just didn’t feel like pepper today, but you do you. You can also add basil leaves on top, nice presentation touch and they combine well with the salad.

TIPS

Add fresh basil leaves.

More extra touches could be adding thin slices of spring onions or balsamic vinegar to the dressing, either or both will provide a bit extra which can help if the tomatoes you are using don’t have much flavour.

You can serve with breadsticks / toasts / pasta for a more filling meal, depending on your hunger levels!
